Lysozyme

This substance is naturally found in human tears and saliva. The dairy industry uses lysozyme to prevent Clostridium Tyrobutyricum, a contaminating agent present in milk and used for the production of cheese, to cause “late swelling”. Lysozyme is extracted from egg whites and hinders the production of gram-positive bacteria, including the heat resistant bacteria. Available liqid, granular on in powder.
